Praline Pumpkin Pie

Ingredients:

  • 1 unbaked pastry shell (10-inches)
  • 1/3 cup brown sugar , packed
  • 3 tbsp soft butter
  • 1/2 cup brown sugar , packed
  • 2 tbsp cornstarch
  • 3/4 tsp cinnamon
  • 1/2 tsp salt
  • 1/2 tsp ginger
  • 1/4 tsp clove
  • 1 (16 oz) can pumpkin puree
  • 1 1/2 cups 10% cream
  • additional pecans, chopped

Directions:

  1. Preheat oven to 450°F.
  2. Combine the pecans, brown sugr and butter; press into bottom of pie shell. prick sides of pastry with a fork.
  3. Bake at 450F for 10 minutes, remove pastry and cool for 5 minutes. Reduce temperature to 350°F
  4. Combine first eight filling ingredients; stir in pumpkin and gradually add cream. Mix well and pour into pie shell.
  5. If desired, sprinkle additional chopped pecans on top.
  6. Bake at 350F for 45-50 minutes or until a knife inserted near the center comes out clean.
  7. Cool completely and store in refrigerator.
