  1. Preheat oven to 350.
  2. Heat oil and butter in a large casserole.
  3. Add pork and cook over medium heat, stirring, for 5 minutes, until browned and then transfer to plate.
  4. Add onion and cook over low heat, stirring occansionally, for 5 minutes, or until softened. add the bell peppers and cook, stirring frequently, for an additional 4-5 minutes. add the mushrooms and cook for 1 minute, then stir in the rice. cook for 1 minute, or until the grains are well coated, then add the stock and bring to a boil.
  5. Return the pork to the casserole and the sausage and all spice and season to taste with salt and pepper. mix thoroughly, cover, and cook in the preheated oven for 1 hour or until all the liquid has been absorbed and the meat is tender.
  6. Serve immediately, garnish with chopped parsley.
