Ingredients:
2 tablespoons corn oil
2 tablespoons butter
1 lb pork loin
1 onion
1 red bell pepper
1 orange bell pepper
4 ounces mushrooms
3/4 cup long-grain rice
1 3/4 cups beef stock
8 ounces smoked sausage
1/4 teaspoon allspice
2 tablespoons chopped parsley
Directions:
1. preheat oven to 350.
2. heat oil and butter in a large casserole.
3. add pork and cook over medium heat, stirring, for 5 minutes, until browned and then transfer to plate.
4. add onion and cook over low heat, stirring occansionally, for 5 minutes, or until softened. add the bell peppers and cook, stirring frequently, for an additional 4-5 minutes. add the mushrooms and cook for 1 minute, then stir in the rice. cook for 1 minute, or until the grains are well coated, then add the stock and bring to a boil.
5. return the pork to the casserole and the sausage and all spice and season to taste with salt and pepper. mix thoroughly, cover, and cook in the preheated oven for 1 hour or until all the liquid has been absorbed and the meat is tender.
6. serve immediately, garnish with chopped parsley.
