Pork and Peppers Stir Fry

Ingredients:

  • 1/2 cup orange juice
  • 2 tbsp soy sauce
  • 1 tbsp honey
  • 2 tsp cornstarch
  • 1/2 tsp ginger
  • 1 lb pork tenderloin , trimmed of fat and cut into pieces

Directions:

  1. Make 4 servings of rice as directed.
  2. In a small bowl combine orange juice, soy sauce, honey, cornstarch, and ginger; blend well.
  3. Set aside.
  4. Cook pork until no longer pink.
  5. Add bell peppers; cook and stir 2-3 minutes.
  6. Add orange juice mixture.
  7. Bring to a boil.
  8. Boil 1 minute or until sauce is slightly thickened, stirring constantly.
  9. Serve over rice.
