Pineapple Cake

Ingredients:

  • 2 cups flour
  • 1 1/2 cups sugar
  • 2 large eggs
  • 1 (15 oz) can crushed pineapple
  • 1 1/2 cups sugar
  • 1/4 cup butter
  • 1 (5 1/2 oz) can evaporated milk
  • 1 cup coconut
  • 1 tsp vanilla

Directions:

  1. Preheat oven to 350°.
  2. Sift together flour, sugar and soda.
  3. Mix in eggs and pineapple.
  4. Pour into a greased bundt pan and bake for 1 hour at 350°F or until done all the way through.
  5. Place all icing ingredients into a sauce pan and bring to a boil.
  6. Turn down heat and simmer for 4 minutes.
  7. Pour icing over warm cake.
