Ingredients:

  • 4 tbsp sugar
  • 2 eggs
  • 1 1/2 cups milk

Directions:

  1. Combine flour and sugar in a bowl. Gradually whisk in egg and milk to make a thick, smooth batter.
  2. Let batter rest for about 30 minutes.
  3. Drop dessertspoons of mixture into a greased heavy-base frying pan over medium heat. Cook until bubbles begin to appear on the surface of the pikelet. Turn and brown other side.
  4. Serve with jam and whipped cream.
