Ingredients:

Directions:

  1. Heat the oil in a saucepan over low heat.
  2. Add the onion and ginger and cook, stirring occasionally, for 10 mins or until onion is soft.
  3. Add the brandy and cook, stirring, for 3 mins or until the liquid is absorbed.
  4. Add the water, vinegar, apricot and sugar.
  5. Reduce the heat to low.
  6. Simmer stirring occasionally, for 40 mins or until the mixture reduces and thickens.
  7. Transfer to a clean dry jar.
  8. Seal and invert for 2 minutes.
  9. Enjoy.
