Pera-piña(rice And Pineapple Drink)

Ingredients:

  • 1/2 cup of rice
  • 2 cups of sugar
  • 90 oz. of water
  • cinnamon stick(optional)
  • vanilla extract (optional)

Directions:

  1. Peel and core the pineapple. Cut into chunks
  2. Rinse your rice.
  3. In a large pot over medium high heat add the water, the rice and the pineapple chunks.
  4. Boil until the rice is very tender about 40 minutes, being careful not to let water run out and replenishing it as needed.
  5. When rice is tender, turn off heat and let this mixture cool down before blending.
  6. Using an immersion blender, blend the mixture until smooth.
  7. You can also use a blender and add the mixture in portions until all the pineapple and rice is pureed.
  8. After you are done blending it.
  9. Take the juice and pass it through a sieve, discarding anything that has not blended.
  10. Put the juice in a nice pitcher and add the sugar(add more to taste), stir.
  11. If mixture is too thick add more water.
  12. Put this juice in the refrigerator.
  13. Serve VERY COLD!!
