Directions:

  1. Cook onion, red pepper, and jalapeño strips in oil in a skillet over medium-high heat 10 minutes or until tender, stirring often. Add 1/4 teaspoon salt, vinegar, and oregano. Cook 1 minute; set aside.
  2. Sprinkle fish filets with remaining salt and pepper; place filets in a lightly greased 13x9-inch baking dish. Top with veggies. Bake, uncovered, at 350°F for 20 minutes or until fish flakes easily when tested with a fork. Garnish with lemon wedges.
