Ingredients:

Directions:

  1. Bring large pot of water to boil; cook pasta until al dente. While pasta is cooking, steam broccoli florets.
  2. In a med mixing bowl, whisk together peanut butter and stock or water until smooth.
  3. Stir in remaining dressing ingredients.
  4. When pasta is done, drain well.
  5. Pour sauce over pasta; toss to coat well.
  6. Add broccoli and tomatoes; toss again.
  7. Garnish with chopped scallions.
