  1. For salad: in large bowl, toss together the tomato, cucumber, peppers, onion, basil and lettuce. Add the croutons and vinaigrette to taste. Toss gently. Set aside to allow croutons to soak up the vinaigrette, 10 to 20 minutes.
  2. For Croutons: In large pan over medium heat, warm oil. Add the bread and cook, stirring as needed, until golden brown, about 4 minutes. Using a slotted spoon transfer croutons to a paper towel lined plate to drain. cool to room temp.
  3. For Vinaigrette: in a small bowl whisk garlic and vinegar. Slowly add the oil in a steady stream, whicking to emulsify. Season with salt and pepper.
