Pamelas Low Fat Chicken Piccata

Ingredients:

Directions:

  1. Coat large skillet with cooking spray & heat over medium-high heat
  2. Dredge chicken lightly with flour (I sometimes omit this step)
  3. Cook chicken until no longer pink (3-5 minutes)
  4. Remove chicken and keep warm on a plate
  5. Melt margarine in same skillet
  6. Stir in 2 Tbs flour
  7. Heat over medium 1-2 minutes
  8. Stir in chicken broth, wine and lemon juice and heat to boiling
  9. Stir until thickened (1-2 minutes)
  10. Reduce heat and simmer 15 minutes until sauce consistency
  11. Stir in parsley
  12. Return chicken to sauce over med-low heat, spooning sauce over chicken, until warmed through
  13. Serve over your favorite pasta
  14. **I sometimes add artichokes and mushrooms, and fresh garlic is delicious in it as well!
  15. PER SERVING: (without artichokes and mushrooms, using white pasta)
