Palak ki Puri ( A puri made of fresh spinach)

Ingredients:

  • 450 g wheat flour (2 cups)
  • 250 g spinach
  • 6 tsp milk
  • 1 1/2 tsp salt
  • oil (for deep frying)

Directions:

  1. Clean and wash spinach.
  2. Place in a pan with little water and onion.
  3. Cook until tender.
  4. Drain and grind to a paste.
  5. Sift flour and salt in a large bowl.
  6. Add spinach and milk to make a stiff dough.
  7. Knead the dough well.
  8. Divide it into 20 parts.
  9. Roll them out into round puris of 3 (7 1/2 cms) diameter each.
  10. Heat oil in a deep frying pan and fry 1 or 2 puris at a time.
  11. Turn once.
  12. Remove when both sides are cooked.
  13. Serve hot with youghurt.
