Overstuffed Bell Peppers

Ingredients:

  • 4 large green peppers
  • 3/4 lb ground beef
  • 2 1/2 cups cooked white rice
  • 1/3 cup chopped onion
  • 1 garlic clove
  • 2/3 cup breadcrumbs
  • 1 tsp basil
  • 3/4 tsp chili powder
  • 1/2 tsp oregano
  • 1 cup shredded cheese , of choice

Directions:

  1. Wash peppers, cut the stem off and seed them.
  2. In a large skillet cook hamburger.
  3. Transfer hamburger to a bowl leaving some of the fat in the skillet.
  4. Add onion to skillet, sauté until tender crisp.
  5. Transfer onion to bowl with ground beef.
  6. Add garlic and salt, simmer 10 minutes.
  7. Meanwhile, add rice breadcrumbs, cheeses, spices, and then the garlic to the bowl.
  8. Stir well, stuff the peppers.
  9. Place peppers upright in a casserole dish.
  10. Bake at 350°F for 35-40 minutes or until peppers are tender.
