Ingredients:

  • 1/4 cup diced tomatoes ( for more kick use rotel hot )
  • 6 slices of smoked sausage
  • 2 tbsp of tasso
  • 3 medium to thin slices bell pepper (chopped up )
  • 2 tbsp onion diced
  • 4 eggs
  • 2 tbsp of butter
  • seasoning to your taste( like salt , pepper , slap yo mama use about 1/4 tsp..)
  • 2 slices of cheese
  • 2 tbsp oil

Directions:

  1. In a bowl mix seasonings, eggs,whisk together and set aside
  2. In a skillett with 2 tbsp of oil place your sausage, tasso and let cook until a dark brown add bell pepper and onion saute' until onions are clear and bell pepper looks cooked (sort of limp looking)
  3. Add diced tomatoes
  4. This takes about 2 to 3 minutes
  5. In a skillet or omelet pan, melt butter
  6. Med heat
  7. Pour egg mixture when it starts to bubble ,where it looks like it curls around the edge
  8. Add sausage and tasso mixture
  9. Add 2 slices of cheese on top of mixture
  10. Then fold over the top half onto bottom to form a half moon shape
  11. Then place onto a serving plate
