Ingredients:

  • 2 1/4 cups oat bran
  • 1/2 tsp salt
  • 1 1/2 tsp cinnamon
  • 1 tsp vinegar
  • 1 1/4 cups skim milk
  • 1/4 cup honey
  • 2 tbsp oil
  • 2 tsp vanilla

Directions:

  1. In a large mixing bowl, combine the dry ingredients. In a separate bowl blend the wet ingredients. Add the wet ingredients to the dry. Mix until blended. But don't over mix-it should be lumpy. Pour into greased or paper-lined muffin tins, filling htem 3/4 full. Bake at 425 for 12-15 minutes or until golden brown.
  2. Option: Add 1/2 cup diced fruit (apples, peaches, berries, banana, raisins) with the wet ingredients for a tasty varaition.
