Nuts 'n' Seeds Bread

Ingredients:

  • 1 egg
  • 1 cup buttermilk
  • 1/3 cup canola oil
  • 1 cup packed brown sugar
  • 1/3 cup finely chopped walnuts (or your favourite nut)
  • 2 tbsp flax seeds
  • 2 tbsp sesame seeds
  • 2 tbsp poppy seeds
  • 2 tbsp wheat germ
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 350F; spray a 9x5 loaf pan with nonstick cooking spray and set aside.
  2. In a large mixing bowl, combine egg, buttermilk and oil.
  3. In a separate mixing bowl, combine all dry ingredients (the remaining ingredients).
  4. Add dry ingredients to wet mixture, stirring to make sure dry ingredients are moistened.
  5. Spread mixture in prepared loaf pan and bake for 50 to 60 minutes, until a tester inserted into centre of loaf comes out clean.
  6. Cool in pan for 10 minutes, then turn out onto a rack and let cool completely.
  7. Note: the nuts and seeds used can be altered to suit your tastes; just keep the total amount used the same.
