My Favorite Vegetable Soup

Ingredients:

Directions:

  1. Wash and chop all vegetables and place in large soup kettle
  2. Add broth to totally cover vegetables
  3. Add pepper
  4. Bring to boil and lower heat to simmer.
  5. Gently simmer covered pot about 60 minutes
  6. Add V8 juice and salt as needed
  7. Simmer another 15 to 20 minutes
  8. Add noodles and contiue cooking untill tender
  9. Ladle into soup bowls and top with a dollop of sour cream.
  10. Serve with hot crust rolls and plenty of butter
  11. This soup is soul warming and wonderful to share with everyone who comes through the door. happy eating!!!
