Ingredients:

  • 1 oz pork fat
  • 2 tbsp nuoc nam
  • 2 tbsp water
  • 2 tsp rice flour
  • 1/4 tsp sugar
  • 1/2 tsp baking powder
  • 1 dash msg (optional)

Directions:

  1. Heat oven 350.
  2. Poach pork fat for 10 minutes. Drain. Let cool. Mince.
  3. In a food processor combine the fat with the ham, nuoc nam, water, flour, sugar, baking powder, MSG, pepper and cinnamon. Pulse until combined.
  4. Press mixture into a sprayed loaf pan.
  5. Place pan in another pan filled with 1 inch of water.
  6. Bake 40 minutes.
  7. Serve at room temperature.
