Ingredients:

Directions:

  1. Boil eggs set aside to cool
  2. Shred the iceburg lettuce place in large bowl
  3. Chop/slice the green onions; add to bowl
  4. Shred cheddar cheese; add to bowl
  5. Place well drained petite peas in bowl
  6. Shell the cooled boiled eggs; chop the eggs and place in bowl
  7. Lightly toss salad ingredients together.
  8. In a separate small bowl, add mayonnaise and mustard mix well
  9. To dressing add salt, pepper, garlic powder to taste, mix well.
  10. Warning; Do not mix too much dressing to the salad. Mix in just enough to lightly dress the salad. If to much dressing is added the salad will become soupy when stored.
  11. This salad is flexible in that you can add or subtract any ingredient according to your own taste. You may also find that adding criply fried crumbled bacon bits adds to the flavor or perhaps sunflower seeds. If your tates run on the spicy side you might add a bit of hot sauce. In any case it is a quick and easy salad. If you're pressed for time buy packaged lettuce shreds & preshredded cheddar cheese. Boil the eggs the night before, You may even buy prechopped green onion.
