Tuna and Avocado Salad

Ingredients:

Directions:

  1. Mash eggs with regular fork.
  2. Cut avocado in half, remove seed, and scoop out pulp.
  3. Place pulp in bowl and squeeze juice from 1/2 lemon to prevent discoloring.
  4. Mash pulp with fork.
  5. Mix eggs and pulp well.
  6. In separate bowl mix tuna, onions, and mayonnaise.
  7. Add tuna mixture to eggs and avocado,.
  8. Serve over lettuce with two tomato wedges on opposite sides of the plate.
