Ingredients:

  • 1 cup sugar
  • 2 eggs
  • 1 1/2 tsp vanilla
  • 1/4 cup applesauce
  • 1/2 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 cup walnuts

Directions:

  1. Cream together butter and sugar. Beat in one egg at a time. Mix in vanilla, mashed banana, applesauce and buttermilk.
  2. In another bowl, sift together dry ingredients, then stir into banana mixture until just moistened. Stir in nuts if desired. (Do not beat or over stir).
  3. Pour into greased loaf pan.
  4. Bake in preheated oven at 350 for Approximately1 hour (ovens vary so check after 50 min)
  5. Remove from oven, let cool 5 minute then remove from pan.
  6. Cool on wire rack.
