Mint And Garbanzo Rice

Ingredients:

  • 1/2 to 3/4 bunch - fresh mint leaves, chopped finely
  • 1/2 cup - garbanzo ( soak overnight and pressure cook until done)
  • 1 to 2 tsp - ghee/butter
  • 1/2 tsp - red chili powder pwd
  • 1/2 tsp - turmeric
  • 3 tbsp - coriander pwd
  • 3
  • khada masala (cloves, cinnamon, cardamom, star aniseed, bay leaves)
  • 1 tsp - lemon juice

Directions:

  1. Method;
  2. Fry Khada masala in oil and then fry Ginger / garlic paste.
  3. Add Onions and fry until translucent
  4. Add other masalas and mint leaves with garbanzo.
  5. Do not OVER fry the above. Remove from heat BEFORE mint changes colour.
  6. Cook Rice separately.
  7. Add rice and Lemon juice to the mint/garbanzo masala and mix well
  8. Garnish with Coriander leaves.
  9. Tips:
  10. Add grated beetroot to the mint/garbanzo masala and make your meal IRON rich.
