Ingredients:

Directions:

  1. Put potatoes and carrots into baking dish.
  2. Drizzle with half of olive oil and squeeze lemon onto veggies.
  3. Sprinkle with half of Italian seasoning and salt and toss lightly.
  4. Bake at 350 for 25 min.
  5. Remove veggies from oven and add broc, mush, zuc, squach and asparagus.
  6. Drizzle with remaining oil, seasoning and salt. and toss until veggies are well coated.
  7. Put back in over for 10 min.
  8. Remove and stir veggies and then cook for another 10 min.
  9. **Cook time varies on how small you chop your veggies. (Large pieces of potato and carrot could take closer to an hour)
