Ingredients:

Directions:

  1. Core and chop one apple.
  2. In small bowl mix chopped apple, raisins, syrup, sugar and cinnamon.
  3. Cut a pocket in the center of the roast.
  4. Stuff center of roast with half of fruit mixture.
  5. Place roast on roasting rack.
  6. Tie with butcher's string to secure stuffing.
  7. Microwave at High 2 minutes.
  8. Reduce power to 50%.
  9. Microwave 10 minutes, rotating 1/4 turn after half the time.
  10. Core remaining apples; place apples next to roast.
  11. Spoon remaining fruit mixture into apple centers.
  12. Baste roast with syrup from fruit mixture.
  13. Microwave at 50% 10 to 15 minutes, or until internal temperature of roast is 170 degrees.
  14. Check temperature in several places.
  15. Cover with foil.
  16. Let stand 10 minutes.
  17. Apples will tenderize after standing.
