  1. Combine all of the vegetables in a mixing bowl, add the mint and toss to mix
  2. Drizzle the lemon juice and is much olive oil as you desire over the mixture, and toss to coat.
  3. Add the feta when getting ready to serve. Season to taste with black pepper.
  4. If making this ahead of time - put in the refrigerator to keep cool, and bring out a little before serving to let warm slightly - this allows the flavors to come out a bit.
