Orzo With Spinach, Tomatoes and Lemon

Ingredients:

  • 1 cup orzo pasta
  • 1 (5 oz) bag baby spinach leaves
  • 2 garlic cloves
  • 1 cup cherry tomatoes
  • 1 tbsp lemon zest
  • 3 tbsp lemon juice
  • 1/8 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Cook Orzo according to package directions, until just al dente.
  2. Mince garlic, add to lemon juice, salt and pepper in small bowl.
  3. Whisk olive oil into lemon juice mixture.
  4. Drain orzo, place in large bowl.
  5. Add spinach leaves and cherry tomaotes to orzo, toss.
  6. Add olive oil/lemon juice dressing and toss to coat.
  7. Serve immediately or chill for later.
