Lemon Prawns and Linguine

Ingredients:

Directions:

  1. Peel and devein prawns leaving tails.
  2. Meanwhile cook pasta in saucepan with plenty of salted water until al dente.
  3. Drain pasta and reserve 125ml of pasta water.
  4. Transfer pasta water to seaparate bowl, set aside.
  5. Meanwhile heat oil in frying pan.
  6. Add onion and cook 5 minutes until softened.
  7. Add prawns and garlic and cook tossing 5 minutes more.
  8. Return cooked pasta to original saucepan. Turn heat back on and add prawn mixture, 60ml lemon juice, lemon zest, butter, parsley and reserved water.
  9. Toss until combined and warmed through.
  10. Season and serve.
  11. Bon Appetito!
