Kinda Like Cobbler

Ingredients:

  • 1/2 cup sugar
  • 1 cup water
  • 2 tbsp butter
  • 2/3 cup milk
  • 1 (16 oz) can fruit, drained (i've used pineapple and peaches)
  • 1/2 cup pecans (crushed )
  • 4 tbsp cinnamon
  • 4 tbsp sugar

Directions:

  1. Place 1/2 cup sugar in a saucepan and caramelize.
  2. To caramelize, just start the temperature out low and keep stirring the sugar around until it starts to brown. You can add a little water if you feel you need it.
  3. Add 2 tablespoons butter, 1 cup of water and 1 tablespoons vanilla extract.
  4. In a bowl, mix together 2 1/4 cups Bisquick and 2/3 cup milk, set aside.
  5. Bring sugar mixture to a boil, drop Bisquick mix in by the spoonful to make dumplings.
  6. Reduce heat to medium low and cover.
  7. Let this simmer until most of the liquid is gone.
  8. In a separate bowl, combine fruit, pecans, cinnamon and sugar. You may need more cinnamon and sugar for your taste, just eye ball it.
  9. Microwave fruit mixture just until warm.
  10. Spoon a few dumplings into a bowl and top with warm fruit mixture.
  11. You can also add a scoop of ice cream if you'd like!
