Kielbasa with Peppers, Potatoes and Onions

Ingredients:

Directions:

  1. Heat skillet to 350 degrees.
  2. Cut kielbasa into 1/2 inch thick medallions. (I use Hillshire Farms Lite Polska Kielbasa, so the calorie count and fat content will actually be less than what is stated here in the Nutrition Facts. The ingredients list would only accept kielbasa ... lol).
  3. Cut peppers into strips (not too thin or they will overcook).
  4. Cut potatoes and onions into bite-size chunks.
  5. Add extra virgin olive oil to skillet; heat oil.
  6. Add kielbasa and cook until browned nicely on both sides.
  7. Add potatoes and brown slightly. (They will continue to cook after adding the peppers and onions).
  8. Add peppers and onions and cook until entire mixture is of desired consistency. (You can add a little water to the mixture to help the cooking along, or if you find the mixture to be too dry or sticking to the pan).
  9. Season to taste with spices such as salt, pepper, garlic powder, oregano, etc., whatever your preference.
  10. It's that easy. Enjoy!
