Japanese Style Potato Salad

Ingredients:

Directions:

  1. Boil unpeeled potatoes.
  2. Cut cucumber lengthwise and remove seeds then cut into thin slices and place in bowl.
  3. Add salt.
  4. Cut onion in thin slices and soak in cold water until ready to use.
  5. Remove skins from cooked potatoes and cut potatoes lengthwise into pieces 1 wide.
  6. Drain cucumber and drain onions well.
  7. Place all ingredients into large bowl and mix well.
