Ingredients:

Directions:

  1. In one pan, fry mushrooms and onions in 1 TBS. olive oil with salt and pepper to taste
  2. In second pan, fry cubed chicken in 2 TBS. Olive Oil and 1 TBS. garlic
  3. In bowl, combine 5 eggs with 1/2 cup cheese mixture
  4. Combine veggies with chicken in a pie plate, then pour egg mixture over top.
  5. Bake for 20 - 30 minutes, or until eggs are set.
  6. Top with thinly sliced tomato, broil for 2-3 minutes.
  7. Top with 1/2 cup cheese mixture. Broil until cheese is melted.
