Ingredients:

  • 100 g sugar (125 ml; 1/2 cup)
  • 200 g margarine (200 ml; 3/4 cup)
  • 1 egg
  • 3 ml vanilla extract (1 tsp)
  • pinch of salt
  • 300 g cake flour (625 ml; 2 1/2 cups)
  • filling
  • 250 g apricot jam (1 cup)
  • 15 ml sugar (1 tbsp)

Directions:

  1. Beat sugar and margarine together until light and fluffy.
  2. Mix in the salt, extract and egg.
  3. Mix in the cake flour.
  4. Mix well.
  5. Place in fridge to rest for half an hour.
  6. FILLING:

  8. Mix jam, colouring and sugar in a saucepan.
  9. Bring to the boil.
  10. Let it boil for about 10 minutes.
  11. Let it cool down.
  12. COOKIE:

  14. Roll out dough on a floured surface.
  15. Not too thin.
  16. Cut out forms.
  17. Cut out circles in half of the cookies.
  18. Bake at 180 deg C (360 deg F) on a greased baking tray.
  19. Bake for 15 - 20 minutes or until golden brown.
  20. Sift icing sugar over hot cookies with holes in it.
  21. Make stripes with the melted chocolate over cookies with holes in.
  22. Put filling on the whole cookie.
  23. Place cookies with holes in on top.
  24. Place in fridge until needed.
