Ingredients:

Directions:

  1. Slice sausage into small pieces and brown in Dutch oven
  2. Remove sausage, add onion, celery, bell pepper and saute' until tender.
  3. Mix in tomatoes, bay leaves, basil, thyme, cayenne and garlic and mix well.
  4. Add consumme' and chicken broth, simmer 40 min.
  5. Return sausage to pot and add chicken
  6. Add salt, pepper and Tabasco to taste
  7. Add rice, cover and cook slowly until rice is tender. Stir occasionally.
  8. As rice begins to absorb the mixture you may need to add additional water or stock as needed.
  9. Just before serving add the green onions and parsley.
  10. Enjoy!
