Ingredients:

Directions:

  1. Fry the sausages in 1 tablespoon of the oil in a casserole dish until brown.
  2. Remove and set aside.
  3. Add the carrots, celery and onion to the casserole dish and cook for 10 minutes, adding the rosemary and garlic for final minute.
  4. Add the lentils, tomatoes and stock.
  5. Return the sausages to the casserole dish, bring to a boil, cover and simmer for 20 minutes.
  6. Remove the lid and cook for a further 10 to 15 minutes until the lentils are soft.
  7. Season to taste with salt and pepper.
  8. Serve with mashed potatoes.
