  1. To Clean: Trim off large leaves and tough ends of stalks. If stalks are large, peel off outer covering with vegetable peeler. Wash thoroughly. Cut stems lengthwise from end through green head to make spears.
  2. To Simmer: Cook broccoli, covered, in a small amount of boiling salted water 15 minutes or just until tender.
  3. To Steam: Arrange broccoli spears in steaming rack with stalks to center of rack. Place over boiling water; cover and steam 20 minutes. To prepare broccoli for salads, steam 6 minutes; refresh under cold water.
  4. Other Cooking Methods: Bake; stir-fry flowerets.
  5. Serving Suggestions: Broccoli may be served with any of the following: Almond Butter, Cheese Sauce, Dill Sauce, Drawn Butter, French Dressing, Lemon-Butter Sauce, Mayonnaise Dressing, Tangy Butter Sauce, or any hollandaise, sour cream, or white sauce.
