Hot Milk Sponge Cake With Broiled Topping

Ingredients:

  • 2 eggs
  • 1 cup sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 cup milk
  • 2 tbsp butter
  • 1/2 cup brown sugar
  • 1/4 cup butter, soft

Directions:

  1. Preheat oven to 350*. Grease a 9 x 9 baking dish.
  2. In a small bowl, beat eggs for 4 minutes.
  3. Slowly add sugar. Beat 4 minutes.
  4. Add vanilla and mix thoroughly.
  5. In a separate bowl combine dry ingredients.
  6. Add to the egg mixture and mix just until blended.
  7. Heat milk and butter just until milk starts to foam.
  8. Add to batter and mix well.
  9. Bake for 25 minutes at 350*. Frost while warm.
  10. Topping:.
  11. Cream butter and sugar.
  12. Add coconut and mix well.
  13. Spread on cake while warm.
  14. Broil for 4 - 5 minutes, or until golden brown.
  15. You MUST keep an eye on this as it will burn very easily.
