Holiday Plantation Pecan And Squash Casserole

Ingredients:

Directions:

  1. After cooking squash until tender, drain and mash slightly
  2. Mix with soup, sour cream, chopped pecans, nutmeg, salt and pepper to taste
  3. Pour into greased casserole
  4. Mix crushed Ritz crackers with the unsalted, melted butter
  5. Top the casserole with the cracker crumbs
  6. Sprinkle lightly with cayenne pepper, or may omit
  7. Bake at 350 degrees for 30 minutes or until bubbly around edges and brown on top
  8. NOTE: this is such a dependable, delicious recipe, and it goes well with so many other dishes. Pimento could be added also, for a little red touch or even some minced red and green pepper!
