Ingredients:

Directions:

  1. Preheat oven to 190 deg C.
  2. Lightly beat the egg whites
  3. Add milk, yoghurt and juice
  4. Add grated apple, lemon juice and rind, currants, sultanas and prunes to mixture. Combine well.
  5. Mix together the flour, rolled oats, baking powder and spices in a seperate bowl.
  6. Add the dry mix to the wet mix.
  7. Spoon into muffin pans and bake for 25 minutes.
