Ingredients:

Directions:

  1. Preheat oven to 350°F.
  2. Prepare egg substitute:.
  3. Combine ground flax seed and soy milk.
  4. Microwave about 1 minute.
  5. Remove from microwave and stir until mixture thickens to egg consistency.
  6. Cookies:.
  7. Cream together shortening and brown sugar.
  8. Stir in egg substitute and molasses.
  9. Stir in dry ingredients and mix well.
  10. Cover and chill till firm (2 hours).
  11. Roll dough into small balls and coat with white sugar.
  12. Place on lightly greased cookie sheet.
  13. Bake for 9-10 minutes (soy flour makes cookies brown faster).
  14. Leave on sheet until set.
