Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups. Place cereal in resealable food-storage plastic bag; seal bag and crush with rolling pin or meat mallet (or crush in food processor).
Mix cereal and milk together in a medium sized mixing bowl.
Let mixture sit for 3 to 15 minutes.
Stir in the applesauce (see Fat Free Baking Mix recipe) and all liquid ingredients.
Fold in the dry ingredients, one at a time.
Divide batter evenly among muffin cups.
Bake 16 to 19 minutes or until toothpick inserted in center comes out clean. Remove from pan immediately.
