  1. Halve and pit avocados. Scoop flesh into a bowl. Wearing rubber gloves, finely chop chilies, including seeds if desired, and add to avocados with onion and salt. Mash mixture with a fork. Guacamole may be made 2 hours ahead and chilled, its surface covered with plastic wrap.
