Ingredients:

Directions:

  1. To cook the eggs place them in a sauce pan and fill with water till it covers at least an inch above the eggs and bring to a boil.
  2. When water boils remove pan from heat, cover with lid and let sit for 20 minutes.
  3. After 20 minutes move eggs to an ice bath to cool for five minutes.
  4. When eggs are cooled remove the shells, slice in half and discard all but one yolk (you can use them all but I don't like to).
  5. Mash avocados with yolk then add the rest of the ingredients except for paprika and stir together.
  6. When entirely mixed, spoon avocado mixture into eggs and sprinkle with paprika.
  7. *Best if served right away to avoid typical browning.
