  1. Peel the avocados and break them into chunks
  2. Peel tomatoes by dropping them in boiling water for a few seconds then de-seed and chop into chunks. (People often skip the peeling and de-seeding but I find the guac gets too soggy if you skip this step)
  3. Put the avocados, onions and juice of two limes in a bowl and mix together.
  4. Add more lime and salt to taste.
  5. I like my guac a bit chunky but if you like it smoother keep mixing and mashing until it reaches the desired consistency.
