Grilled Scallops and Vegetables With Cilantro Sauce

Ingredients:

Directions:

  1. Spray cold grid with nonstick cooking spray.
  2. Preheat grill to medium high heat.
  3. Heat chili oil and sesame oil in small saucepan over medium heat.
  4. Add green onion; cook about 15 seconds or just until fragrant.
  5. Add ginger; cook 1 minute.
  6. Add chicken broth; bring to a boil.
  7. Cook until liquid is reduced by half.
  8. Place mixture in blender with cilantro; blend until smooth.
  9. Set aside.
  10. Thread scallops and vegetables onto skewers.
  11. Grill about 8 minutes per side or until scallops turn opaque.
  12. Serve hot with cilantro sauce.
