  1. Hard boil eggs according to recipe of how to Boil a hard-boiled egg on this site ( I ill try to find it and post the creator)
  2. Peel eggs being very careful to keep them smooth
  3. Cut eggs as you would for deviled eggs
  4. Remove yolks and set aside in small bowl
  5. -
  6. Carefully place egg whites in a bowl with enough water to cover
  7. Add green coloring to a cup of water to your satisfaction
  8. Allow to sit until whites are a nice shade of green
  9. Remove from bowl separate and let dry on plate
  10. -
  11. Cut spam in chunks and put in blender or processor with chunked onion,1 cleaned pepper , sour cream and 1/2 mustard and grated onion.
  12. Process until the consistency of deviled egg filling but a little chunky.
  13. Remove from processor and place in small bowl adding green coloring to mix

  15. Prepare your round serving plate with small spring greens
  16. With a small spoon or scoop fill egg halves one at a time with spam filling and arrange on your platter in one or two circles.
  17. Leave space in the center for a small ramekin or leprechan pot

  19. Mash the yolks
  20. Tiny bit salt and white pepper
  21. Other half spoon mustard
  22. Deep yellow food coloring
  23. 1/2 spoon sour cream

  25. Place yellow yolk mix as a pot o' gold in center of dish

  27. Clean and chop 2nd jalapeno very fine
  28. Sprinkle around edge of plate
  29. -
  30. Wash an dry cilantro...pick off leaf ends and place one on or near each egg
  31. Use you imagination...a rainbow is all that's missing
