Greek Potato Salad

Ingredients:

  • 1/4 cup olive oil
  • 3 tbsp mayonnaise
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp dried oregano

Directions:

  1. Cook potatoes in boiling salted water to cover 30 minutes. Cool slightly. Cut into 1-inch pieces.
  2. Whisk together oil and next 5 ingredients; toss with potato.
