Ingredients:

  • 2 lbs potatoes
  • 2 tbsp olive oil
  • 1 clove garlic
  • 3 fresh tomatoes, peeled and cut into pieces (can substitute 1/2 of 1 28-oz can chopped tomatoes, drained)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp oregano

Directions:

  1. Parboil potatoes about 15 minutes, drain, peel, and cut into thin slices.
  2. In large skillet, lightly brown garlic in oil.
  3. Remove garlic from pan, add tomatoes, salt, pepper and oregano.
  4. Cook tomatoes about 5 minutes.
  5. Add sliced potatoes to tomato mixture, and cook about 10 minutes more.
  6. Serve immediately.
