Greek/Mediterranean Pizza

Ingredients:

  • 300 g a good sized handful pizza dough
  • 2/3 cup hummus
  • 1/3 cup red pepper (sliced thin)
  • 1/3 cup red onion (sliced thin)
  • 1 tbsp oil
  • 2 tsp italian seasoning
  • 1/2 tsp salt

Directions:

  1. Prepare pizza dough. Stretch it to fit the pan, creating as thick or thin a crust as you wish.
  2. Place pizza dough in greased dish/baking tray with a little bit of cornmeal sprinkled on the bottom.
  3. Spread hummus onto the dough in the pan (as thin/thick as you would like - mine was about 1/4 inch thick).
  4. Fry chicken (or use any other cooked chicken you may have) in a pan with a little bit of oil, italian seasoning, and salt.
  5. Once the chicken is cooked through, place evenly over pizza.
  6. Spread red pepper and red onion evenly over pizza (to taste).
  7. Bake in a 350 degree oven for 10-13 minutes or until crust is golden brown on sides and bottom.
