Ingredients:

  1. Preheat oven to 350 degrees.
  2. Dice 1 medium sized peach, then sprinkle with brown sugar in a medium sized mixing bowl.
  3. Melt Smart Balance in microwaveable measuring cup.
  4. Add dry ingredients starting with the oatmeal in a food processor, pulse until blended completely.
  5. Add egg to milk. Pour slowly into food processor while it is running, add melted butter, then scrape down sides and bottom as soon as the mixture smooths out. pulse again for about 15 seconds to complete mixing.
  6. Pour batter onto peach slices and brown suger mixture, then fold the mixture completely.
  7. Put about 1 heaping tablespoon of peach batter into a greased muffin tin.
  8. Bake at 350 degrees for about 25 minutes or until golden.
